Chewy Gooey Cookie Love??
Then this recipe is for you, after years of trial and error and a lot of mess in the kitchen, I think I've cracked it! The nicest homemade soft chewy cookies ever (think subway cookies! And I can safely say that as I used to be a subway sandwich artist haha)
This recipe is perfect in the same way a lot of my others are, in that it can be tweaked here and there to create some absolute flavour sensations. So firstly I'm going to share with you to basic cookie recipe, then at the end I will add a few of my favourite variations for you to try.
115g light soft brown sugar
110g caster sugar
1tsp of vanilla extract
220g Self raising flour
Cream together butter and sugars
Add egg and vanilla extract
Add flour and mix thoroughly until all combined and you've got a nice malleable cookie dough going on.
Line a baking tray with greaseproof paper, I always spray my tray first with fry light as this keeps the paper in place.
I use a teaspoon for size guide.
Get a heaped teaspoon of cookie dough mixture, Roll into a ball between your hands and place on your baking tray. As a general rule a tray should take 4-6 balls, with about a 3inch space between them as they do spread really nice and do not need patting down with a fork.
Cook at 180c for roughly 8-10 minutes (all ovens are different so it's best to keep an eye on them and when the edges are just turning golden, remove them from the oven)
Leave to sit for 10-15 minutes before transferring onto a wire rack for cooling. Its important that you leave them to sit, as they are quite soft when first taken out of the oven and will harden slightly if left to sit.
This basic cookie mixture makes an average of 24 cookies, the nutritional values are stated below per cookie.
Lavender and lemon: Add the juice and rind of 1 lemon and 1tsp of culinary lavender when you add the vanilla and egg.
Salted caramel and Fudge: Add 100g of fudge pieces and 1tbsp of salted caramel sauce when you add the vanilla and egg.
Triple chocolate: Add 50g each of milk, dark and white chocolate chips with the vanilla and egg.
Cranberry and white chocolate: Add 50g dried cranberries and 100g of white chocolate chips when adding the vanilla and egg.
