So I promised you all my healthy brownie recipe and here it is. These are the brownies I make for myself because they're much lower in calories than regular brownies AND they're vegan and gluten free. Lots of feel good news there and I can assure you, they are going to be the best "healthy" brownies you will taste EVER!! As with me (I can be lazy..... no denying it) all recipes use cup measurements where possible to make life that wee bit easier, you're welcome. INGREDIENTS: 2 Kid sized Bananas 1 Cup caster sugar 1/2 Cup melted coconut oil 1 tsp Vanilla extract 3/4 Cup of gluten free plain flour 1/4 Cup of Cocoa Pinch of salt 1 Heaped tablespoon of peanut butter FYI I literally use a small mug that I'd normally have a brew in for all my recipes, as long as you're using the same mug throughout it will work out perfect! METHOD: PREHEAT OVEN TO 180C 1) Using a fork mash your two over ripe bananas until they're basically liquid and have as little lumps as possible. 2) Add your cup of sugar. 3) Melt your coconut oil in a microwave then add that to your mixing bowl also ( reserve 2 tablespoons) and mix thoroughly. 4) Add flour, cocoa (reserve 1 tablespoon) and salt and fold together. 5) Use your reserved melted butter and using a pastry brush coat the bottom and sides of a square 20x20 cake tin with it. Once done add your tablespoon of cocoa to your cake tin and gentle shake it so that the whole base and some of the side are coated with the cocoa, this will stop your brownies from sticking to your cake tin. 6) Pour your brownie mix into your cake tin. 7) Melt your peanut butter in the microwave with the other tablespoon of coconut oil, once melted to a runny consistency, drizzle all over the top of your brownie mix and using a smooth knife, gently swirl it through the top of your brownie mix. 8) Place your brownie in the oven to cook for roughly 20-25 minutes. Once cooked leave to cool a little before cutting. They will be very sticky moreish brownies. This recipe makes 9 squares, nutritional info per square provided below.... Cals 178 Protein 2.9g Fat 7g Carbs 31.5g Have fun tucking into these super squidgy, moist (hate that word haha) brownies!!!
