The best narna bread ever...

Okay so being a busy mum of 5, the main thing I look for from my recipes is their easiness! Meaning I don't have the time (or the patience mostly) to sit there weighing out every last ingredient. Boooooring! So one thing you'll definitely find from MY recipes is they're easy haha literally all you'll need to measure your ingredients is a cup, a teaspoon and maybe the occasional tablespoon.

So onto my narna bread recipe. I receive a LOT of compliments on this with friends and family requesting the odd loaf here and there. Saying that, this recipe makes 1 x 2lb loaf or 12 muffins.
It can be frozen without any icing on, making it versatile and handy to always have some in the freezer. My preferred method is making 12 muffins and freezing them. On a typical morning, as a mum of 5 having breakfast before the school run is IMPOSSIBLE!! So I like to get one of these out of the freezer, nuk (microwave it) and put a brew in a takeaway cup, viola a yummy warm breakfast on the go, what can I say but hey you're welcome!

THE RECIPE
1/2 cup margarine softened 
1 cup caster sugar
2 eggs
3 bananas mashed with a fork
2 cups self raising flour 
tsp baking soda
tsp of vanilla extract

METHOD
Firstly I mash the bananas with a fork
Then I add softened butter and mix
Then add sugar & eggs and mix
Then add flour, vanilla and baking soda, mix thoroughly.
Divide mixture equally between 12 muffin cases and cook for 20-25 minutes @180, or...
Put mixture into a 2lb loaf tin and bake in the oven for 80minutes @180, covering over with tin foil halfway to keep the top nice. 

Remember you cannot freeze this if you ice it, so if that's your plan freeze before icing.
If you want to ice it my fav is to make a small amount of cream cheese frosting for the muffins and sprinkle chopped walnuts on top or make a water/icing sugar mix to drizzle on top of the cooled loaf.

My ultimate fav, is to not ice it. Wait for it to cool, then slice a piece off, spread some jam on it and have a slice with a cuppa tea, Perfection!!
